Aloha Angel Food Cake

If you need to satisfy your sweet tooth while watching your waistline, this is the prescription for you. This cake is so quick and easy to prepare. There are literally only two ingredients you’ll need: a box of Betty Crocker Angel Food cake mix and a can of crushed pineapple. That’s it!!

If you need a quick dessert for company, trust me, you’ll be the star of the show when you serve this pineapple delight. If you really want to impress your guests, top it all off with some fresh fruit and you are ready to go. The only real challenge you might have is to keep from eating it all before they arrive.


Aloha Angel Food Cake

Ingredients:

  • 1 box Angel Food Cake Mix (16 ounces, I prefer Betty Crocker)

  • 1 can crushed pineapple (20 ounces, in its own juice)


Directions:

Preheat oven to 350 degrees.

Cut a round of waxed paper or parchment paper to fit the bottom of a 10 inch springform pan. Do not grease the pan.

In a large mixing bowl, empty the dry cake mix. Add the whole can of crushed pineapple along with the juice.

Stir with a fork. Mixture will start to foam. Mix just until combined. Do not over mix. Scrape the batter into the springform pan and spread evenly.

Bake until a toothpick placed in the center of the cake comes out clean.

The baking time may vary according to your oven. Do not under bake.

Mine took 45 minutes, although the original recipe says to bake 25-30 minutes.

Remove from oven and let cool in pan for 10 minutes. Run a knife around the edge of the cake before removing the ring of the springform pan.

This can also be baked in a greased 9x13 inch pan or a 9x13 inch baking dish lined with parchment paper.

Dust with powered sugar after the cake has cooled.

Feel free to serve with fresh berries, however, this cake is delicious all on its own.
