Pink Harold
Hi and happy spring! We made it through the cold and gray winter here in Kentuckiana. As all of the beautiful flowers start to bloom, filling our lives with color, I thought it would be fun to share a recipe that I like to make around Easter each year. It’s a creamy fruit salad that my family has lovingly named “Pink Harold".
Smoked Sausage Soup
I love to curl up with a delicious bowl of soup, especially through the fall and winter months. This soup is great for anyone that has a busy life and needs a quick, warm and welcoming meal. No Bake Fruitcake
Do YOU like fruitcake?? Have you ever asked someone if they like fruitcake? The reaction most people have is “Thanks but no thanks.” However!! I was introduced to this no bake recipe abut 40 years ago, and it’s unlike any fruitcake I had ever tasted. Once I sampled it, I was hooked, and I have been making it ever since.
Mom’s Pumpkin Bread
Ok, I admit it, I’m a Fall Fanatic! It's my favorite season of the year without a doubt and nothing says fall to me like pumpkin bread. This particular recipe was introduced to our church community in the 1960s by our associate minister’s wife. My mother made this recipe so many times over the years, it’s naturally named "Mom’s pumpkin bread.” One of my fondest memories is sharing a piece (or two) with her whenever she baked it. Trust me, I have tried lots of pumpkin bread recipes, but this one is my absolute favorite. I know you will love it too.

Chicken, pork and beef oh my! It’s Kentucky Derby festival time, so let’s make some burgoo.
Sally’s Brownies
For quite some time, I’ve heard about Sally’s brownies from my son-in-law. Sally is his coworker at United Airlines Corporate Office in Chicago. Among her other talents, Sally has earned the title of official brownie maker for their office, and also for her family and friends. Whenever there’s an occasion at the office for any celebration, Sally makes her famous brownies.

Family Favorite Swiss Steak
Swiss steak is a dish I have prepared for most of my adult life. For a young cook, this was an easy dish to make and it turned out perfectly every time. What a blessing to be able to prepare a few ingredients in the morning, place them in the crock pot and have it ready to serve for dinner after a really busy day!

If you need to satisfy your sweet tooth while watching your waistline, this is the prescription for you. There are literally only two ingredients you’ll need: a box of Betty Crocker Angel Food cake mix and a can of crushed pineapple. That’s it!!
Amaretto Celebration Punch
As we approach the last days of 2020, I thought it would be appropriate to end with a celebration drink! This recipe makes a lovely, icy cocktail with orange juice, lemonade, tea and Amaretto. I recommend topping off with a lemon-lime soda or ginger-ale and garnishing with sliced fruit and maraschino cherries. Drop in the straw and you’re all set to party!

One of my earliest memories of making cut-out sugar cookies, lovingly called “cookie cutters,” was with my mom and brothers during the holidays.
