No Bake Fruitcake
Do YOU like fruitcake?? Have you ever asked someone if they like fruitcake? The reaction most people have is “Thanks but no thanks.” However!! I was introduced to this no bake recipe abut 40 years ago, and it’s unlike any fruitcake I had ever tasted. Once I sampled it, I was hooked, and I have been making it ever since.
Mom’s Pumpkin Bread
Ok, I admit it, I’m a Fall Fanatic! It's my favorite season of the year without a doubt and nothing says fall to me like pumpkin bread. This particular recipe was introduced to our church community in the 1960s by our associate minister’s wife. My mother made this recipe so many times over the years, it’s naturally named "Mom’s pumpkin bread.” One of my fondest memories is sharing a piece (or two) with her whenever she baked it. Trust me, I have tried lots of pumpkin bread recipes, but this one is my absolute favorite. I know you will love it too.
Kentucky Pig Pen Cake
Happy Spring Y'all! I have been making this version of a pig pen cake for at least 40 years, after a neighbor shared this recipe with me in the 80’s. This cake is served cold, so it’s light and refreshing on a warm spring or summer day.
Southern Decadent Chocolate Cake
This chocolate cake is a great way to celebrate Fat Tuesday and your sweet tooth - making this recipe seems too easy to be true! It starts with a cake mix and with the addition of a few more ingredients, it’s all mixed and baked in one 9"x13" pan. Couldn’t be easier and the chocolate frosting just adds another layer of decadence. Once you have tried this, let me know how much you enjoy it. I believe you will be making this again and again! Laissez les bon temps rouler!
Aloha Angel Food Cake
If you need to satisfy your sweet tooth while watching your waistline, this is the prescription for you. There are literally only two ingredients you’ll need: a box of Betty Crocker Angel Food cake mix and a can of crushed pineapple. That’s it!!
Mabel’s Sour Cream Coffee Cake
Mabel was a family friend and her coffee cake was a favorite of ours. This is my take on a mid-century classic recipe.
Ice Cream Sandwich Cake
It’s always the right season for this ice cream sandwich cake. It’s versatile because you can use your favorite ingredients between the layers of ice cream sandwiches, frost it with whipped topping, freeze it, slice it and Voila; you have a beautiful, delicious dessert made with only a few minutes of preparation.
Shirley’s Strawberry Cake
My mother used to make this delicious cake for me and my brothers, especially in the summer. It's the perfect treat for a warm summer day.
