Hi and happy spring! We made it through the cold and gray winter here in Kentuckiana. As all of the beautiful flowers start to bloom, filling our lives with color, I thought it would be fun to share a recipe that I like to make around Easter each year. It’s a creamy fruit salad that my family has lovingly named “Pink Harold".
Mom’s Pumpkin Bread
Ok, I admit it, I’m a Fall Fanatic! It's my favorite season of the year without a doubt and nothing says fall to me like pumpkin bread. This particular recipe was introduced to our church community in the 1960s by our associate minister’s wife. My mother made this recipe so many times over the years, it’s naturally named "Mom’s pumpkin bread.” One of my fondest memories is sharing a piece (or two) with her whenever she baked it. Trust me, I have tried lots of pumpkin bread recipes, but this one is my absolute favorite. I know you will love it too.
Strawberry-Rhubarb Jam
Although I grew up in the country, I first time I encountered a rhubarb plant was in the garden of my mother-in-law. This huge plant with giant leaves and large red-green stalks was beautiful to behold. As I recall, they had several plants that came back each year. Having that much rhubarb almost demanded that we use it in some way, and I was the chosen recipient.

Among her other talents, Sally has earned the title of official brownie maker for their office, and also for her family and friends. Happy Spring Y'all! I have been making this version of a pig pen cake for at least 40 years, after a neighbor shared this recipe with me in the 80’s. This cake is served cold, so it’s light and refreshing on a warm spring or summer day.
