Fiesta Chicken

A ladies hen party is always a great place to get a new recipe. This recipe for Fiesta Chicken is just that. My friend shared this with me about 8 years ago and I have been making it ever since. If you have a busy lifestyle and need an easy main dish, or if you entertain and need hors d’oeuvers at parties, this is a great choice. Depending on how you finish off your final dish, this can be a low calorie option. Its versatility is amazing, so get creative with the yummy leftovers! Enjoy!


Fiesta Chicken

Ingredients:

  • 2-3 pounds boneless, skinless chicken breast

  • 1-1 ounce package taco seasoning mix

  • 1-16 ounce jar Picante sauce


Directions:

Place 2-3 pounds of boneless, skinless chicken breasts in a slow cooker. Sprinkle the chicken with a 1-ounce package of taco seasoning mix (spicy or mild, your choice).

Pour one 16 ounce jar of Picante sauce or salsa (spicy or mild) over all of the ingredients in the slow cooker. Do not stir.

Place lid on slow cooker and cook on low for 6 hours or on high for 4 hours. Cooking slower will allow more time for the seasonings to penetrate the chicken. The thickest part of the chicken breast should reach an internal temperature of at least 165°F.

Remove the chicken breasts from the slow cooker and place in a bowl.

Shred chicken using two forks. Spoon juice from slow cooker over the shredded chicken.

Serve with warmed flour tortillas. Garnish with your choice of condiments.

I like mine with chopped tomatoes, shredded cheddar cheese, diced onion, lettuce and sour cream.
