Hi and happy spring! We made it through the cold and gray winter here in Kentuckiana. As all of the beautiful flowers start to bloom, filling our lives with color, I thought it would be fun to share a recipe that I like to make around Easter each year. It’s a creamy fruit salad that my family has lovingly named “Pink Harold".

For quite some time, I’ve heard about Sally’s brownies from my son-in-law. Sally is his coworker at United Airlines Corporate Office in Chicago. Among her other talents, Sally has earned the title of official brownie maker for their office, and also for her family and friends. Whenever there’s an occasion at the office for any celebration, Sally makes her famous brownies.
Kentucky Pig Pen Cake
Happy Spring Y'all! I have been making this version of a pig pen cake for at least 40 years, after a neighbor shared this recipe with me in the 80’s. This cake is served cold, so it’s light and refreshing on a warm spring or summer day.

One of my favorite vegetarian salads is this Asian Ramen Salad. I love the crunch of the Napa Cabbage combined with the toasted sunflower seeds, sliced almonds and Ramen Noodles.

If you need to satisfy your sweet tooth while watching your waistline, this is the prescription for you. There are literally only two ingredients you’ll need: a box of Betty Crocker Angel Food cake mix and a can of crushed pineapple. That’s it!!
Amaretto Celebration Punch
As we approach the last days of 2020, I thought it would be appropriate to end with a celebration drink! This recipe makes a lovely, icy cocktail with orange juice, lemonade, tea and Amaretto. I recommend topping off with a lemon-lime soda or ginger-ale and garnishing with sliced fruit and maraschino cherries. Drop in the straw and you’re all set to party!
