Mexican Cheese Torte
Cinco de Mayo is just days away and how better to celebrate than with a yummy Mexican style cheese torte! During my catering years, I developed this recipe to serve as an Hors D’oeuvre and it looks and tastes fantastic when served with assorted crackers. The base is cream cheese, and with a few easy additions and toppings, it becomes a flavorful, colorful cheese spread. This dish quickly became a client favorite and was requested time and again.
Ham & Swiss Croissant Casserole
The taste of this casserole reminds me of eating a Croque Madame in France. Like the sandwich, this casserole is truly delicious and it’s a perfect dish for brunch. Since you can do all of the prep work the day before, it’s really easy to pop it in the oven when you’re ready. The Hot Brown sandwich was created by Chef Fred Schmidt at the Brown Hotel in Louisville, Kentucky in 1926. It’s a wonderful open-faced turkey sandwich served hot with tomatoes, Mornay sauce and bacon. It’s a delicious treat and I hope you’ll enjoy it!
Gougères Au Fromage (Cheese Puffs)
When I visited the south of France a few years ago, our friends Brigitte and Mabrouk invited us to have brunch at their home. Their home is gorgeous and sits on a hill, overlooking the Mediterranean. We sat around the pool drinking Mimosas while savoring not only the view, but also the wonderful hors d’oeuvres Brigitte had prepared. The “cheese puffs” were particularly delicious, and we ate as many as possible, struggling to remain polite when faced with such a delicious treat. They were made from cream puff pastry dough with the addition of a wonderful French Gruyere cheese and a pinch of cayenne pepper and nutmeg, just for a little surprise. These treats bake up light and tasty and will be delicious for any occasion!
