Easy-Peasy Peanut Brittle

This is my hands down favorite recipe for peanut brittle. I absolutely recommend this recipe if you are looking for something really easy to make and share with friends and family. One Christmas, the people in my neighborhood gathered at a local restaurant for breakfast. One of the ladies came bearing little gift bags full of this peanut brittle. We were impressed and very happy to take home such a nice and unexpected treat. We figured that it must have taken her all day to make such a big batch. Then she revealed her secret! It was actually made in the microwave. Turns out, the difficult part was not making it, but trying to stop eating this delicious candy. She was kind enough to share the recipe with me, so now I’m sharing it with you. Substitute with your favorite nut to be even more creative and make this recipe your own.

Easy-Peasy Peanut Brittle

Yield:

  • approximately 1½ pounds

Prep Time:

  • 10 minutes

Cook Time:

  • 9 minutes

Total Time:

  • 19 minutes


Cookie Ingredients:

  • 1 cup granulated sugar

  • ½ cup light corn syrup

  • 1½ cups peanuts (dry roasted, unsalted)

  • 1 teaspoon salted butter

  • 1 teaspoon vanilla extract

  • 1 teaspoon baking soda


Directions:

Butter a cookie sheet and set aside.

Combine sugar and corn syrup in a 2 quart glass bowl. (I use a 2 quart Anchor Hocking measuring cup with handle).

Microwave on high for 4 minutes. Carefully remove from the microwave and stir in the peanuts. Microwave again for 3½ minutes. (Note: my microwave is 1000 watts.)

Remove from the microwave and stir in butter and vanilla. Microwave 1½ minutes longer.

Remove from microwave. Stir in baking soda. The mixture will become light and foamy. Working quickly, pour mixture onto the buttered cookie sheet and spread thin.

Cool completely and break into pieces before serving.

Variations: Substitute other nuts for peanuts. Pecans, Cashews or Pistachios are delicious. Use the same amount of these nuts as for peanuts.

You can substitute your favorite nut for peanuts. Pecans, Cashews or Pistachios are delicious. Use 1½ cups of your nut of choice.
