Mell-O Jell-O
If you’re looking for a light and tangy dessert, look no further! This delicious treat has been a family favorite for many years and I’m thrilled to share it with you. The flavors are bright and refreshing, coupled with the playful textures of the Jell-O and whipped topping. Appropriate for all ages and just different enough to make your contribution to the party’s dessert table a stand-out hit!
Mell-O Jell-O
Orange Gelatin Ingredients:
1 can Mandarin oranges (11 ounces), drained
1 large package (6oz) orange instant gelatin
2 cups water, boiling
2 cups water, cool
Lemon Pudding Ingredients:
1 large package (4.3 ounces) lemon cook and serve pudding
2 egg yolks
½ cup sugar, granulated
2¼ cups of water
Topping Ingredients:
1 small package (3.4 ounces) lemon instant pudding
1 cup milk
2 cups whipped topping (I prefer Extra Creamy Cool Whip)
Directions:
Drain the mandarin oranges and set aside.
According to the directions on the package, dissolve the orange gelatin in 2 cups of boiling water, then stir in 2 cups of cool water. Set aside.
Prepare the cook and serve lemon pudding with the egg yolks, sugar and water as indicated in the list of ingredients. Add it to the orange gelatin and whisk to combine.
Fold in the drained mandarin oranges. Pour into a 9”×13” pan.
Refrigerate until set.
Combine instant pudding mix and milk and stir for 2 minutes to dissolve pudding mix. It will become thick. Fold in whipped topping. Spread the topping evenly over the chilled and set orange and lemon layer.
Tips and Tricks:
If you’d like to garnish the top with mandarin orange slices as pictured, purchase a 15 ounce can of Mandarin Oranges (instead of the 11 ounce can) and reserve several slices for your garnish. This looks very pretty!
