Creamy Olive Nut Spread

Years ago, I was asked to sub at a friend’s Bunco night. Who remembers Bunco? The food was just as important as playing the game. Everyone would make their signature dishes and treats. On this particular night, someone made tea sandwiches with the most delicious spread, and I immediately fell in love. The combination of the creamy, salty, and nutty taste is the perfect trio of flavors. It goes without saying that I left the party with the recipe. I was amazed at the simplicity of the recipe and I think you will be too.

Throughout the years I have continued to make this delicious spread over and over, and it’s always a popular offering. There are numerous ways to serve it, so it makes for a very versatile option. It can be served as sandwiches, I think its best on date nut bread, or party rye bread. It can also be served on various crackers, and it’s just plain delicious. If you’ve never had it, give it a try!

Make good food with gratitude,

Mixing Time:

  • 5 minutes

Total Time:

  • 10 minutes

Ingredients:

  • 6 ounces cream cheese (at room temperature)

  • ½ cup mayonnaise

  • ½ cup pecans or walnuts (chopped)

  • 1 cups sliced green olives (drained, reserving juice)

  • ½ teaspoon black pepper

Directions:

In a bowl, mix the softened cream cheese and mayonnaise until blended. Stir in the sliced olives, olive juice, and the black pepper. Mix well. Fold in the chopped nuts to incorporate. Can be served immediately or refrigerated until time to serve.

Tips and Tricks:

Instead of plain green sliced olives, you can also use salad olives, which have some pieces of pimentos included as well. It adds another flavor to the spread, and gives it more color as well.

This spread can be prepared ahead of time, and will keep well in the fridge. However, I can’t guarantee that it will remain in your fridge if it’s discovered by your family before you want to serve it for company. It’s that wonderful!!
