Cinco de Mayo is just days away and how better to celebrate than with a yummy Mexican style cheese torte! During my catering years, I developed this recipe to serve as an Hors D’oeuvre and it looks and tastes fantastic when served with assorted crackers. The base is cream cheese, and with a few easy additions and toppings, it becomes a flavorful, colorful cheese spread. This dish quickly became a client favorite and was requested time and again.

I have to tell you friends, not all corn dip is created equally. This recipe is a combination of all the best parts of several recipes, plus a little bit of my own spin.
