Hi and happy spring! We made it through the cold and gray winter here in Kentuckiana. As all of the beautiful flowers start to bloom, filling our lives with color, I thought it would be fun to share a recipe that I like to make around Easter each year. It’s a creamy fruit salad that my family has lovingly named “Pink Harold".

Although I grew up in the country, I first time I encountered a rhubarb plant was in the garden of my mother-in-law. This huge plant with giant leaves and large red-green stalks was beautiful to behold. As I recall, they had several plants that came back each year. Having that much rhubarb almost demanded that we use it in some way, and I was the chosen recipient.

Nothing announces the arrival of summer quite like a generous slice of fresh strawberry pie piled high with a mountain of fresh whipped cream. Here in Kentuckiana, strawberries are really in season starting in late June. Its always a fun time to go to the local family farm and go strawberry picking…

My mother used to make this delicious cake for me and my brothers, especially in the summer. It's the perfect treat for a warm summer day.
